Very Easy Beef Stew

Makes 4 servings
Preparation time: 30 mins
Cooking time: 3 hours

What to grab

Taunton Farmers Market's photo.2 onions peeled and sliced
A little vegetable oil
500g / 1lb ¼ oz longhorn beef cut into bite size chunks (this is one packet of diced stewing steak from a longhorn beef box)
4 carrots
1 beef stock cube
900ml /1 ½ pt water

1 tablespoon fresh parsley, chopped
4 large potatoes cut into large chunks

Here we go

Fry the onion until golden in a little oil, then add the beef until the chunks are lightly browned.

If you are using left over meat from a Longhorn roasting joint, there is no need to fry it – just fry the onions.

Place in a casserole dish and add everything else except for the potatoes.

Cover and cook in a preheated oven at 180C/350F/Gas 4 for 30 mins then turn down to 160C/325F/Gas 3.

Cook for a further 1.5 hours then add the potatoes and continue to cook for another 1 hour.
